Cast iron's heavy thermal mass means once the pan is hot, the heat stays put, so crusts darken predictably and the center cooks through. Pre-seasoned at the foundry with vegetable oil; develops a glossier, more nonstick patina the more you use it.

Material

Cast iron with vegetable-oil seasoning.

Care

Hand wash with hot water and a stiff brush; avoid soap when possible. Towel-dry immediately and rub a thin layer of cooking oil over the surface before storing to keep the seasoning healthy. Not dishwasher safe.
